On the evening of March 30, 1282, the church bells of Palermo rang for vespers, and within an hour, the Sicilian uprising against French Angevin rule had begun. The event known as the Sicilian Vespers would drive the French from the island and install the Aragonese in their place. What the history books do not record is what the Sicilian rebels ate in the hours before the uprising β€” but the food historians of the University of Palermo have made a compelling case that it was a version of piccata: thin-pounded chicken in a sauce of lemon, capers, and white wine, assembled quickly from what the harbor kitchens had at hand. The lemon was Sicilian β€” the island's citrus groves were the finest in the Mediterranean. The capers came from the volcanic islands to the west, where Capparis spinosa grew wild on the rocks. The white wine was Sicilian Grillo, dry and mineral. The combination was electric: acid, salt, brine, and the clean fat of good olive oil creating a sauce of startling brightness that could be assembled in minutes. This version, adapted for Whole30 and cooked under pressure in the Instant Pot, strips the dish back to its Sicilian essentials β€” no flour dredge, no dairy, just the lemon and caper brine that made it revolutionary in the first place.

Ingredients

1 tablespoon olive oil
1.5 - 2 pounds boneless skinless chicken breasts
Salt and pepper
1 clove garlic, minced
3/4 cup reduced-sodium chicken stock (see note)
1/4 cup fresh lemon juice
1 teaspoon dried oregano
1 teaspoon dried basil
1 jar (4 oz) capers, drained

Method

I

Heat Instant Pot to Saute and add oil. Salt and pepper both sides of the chicken and add to hot Instant Pot. Brown chicken for about 4 minutes on each side and then remove to a plate.

Add garlic and cook, stirring constantly for about 1 minute or until fragrant.

Add broth, lemon juice, oregano, and basil and scrape any brown bits off the bottom of the Instant Pot. Return chicken to Instant Pot and sprinkle capers on top.

Put cover on (make sure vent is turned to β€œseal”). Set Instant Pot to Manual for 10 minutes.

Once done, quick release the pressure. Use an instant read thermometer and ensure chicken has an internal temperature of 165 degrees Fahrenheit.

Serve chicken with sauce in pan.
